Classic Reuben

Fermentation is a hot topic right now, but this important subject is less food fad and more lifestyle choice. Start with a jar of sauerkraut. It's easy and delicious--especially on this classic Reuben Sandwich!

For the Thousand Island Dressing:
1 cup mayonnaise
2 Tbl ketchup
1 Tbl Green Apple Balsamic
2 tsp honey
2 Tbl chopped pickles
2 Tbl minced onion
Salt & Pepper to Taste

For the Reuben:
Seeded Rye Bread
Pastrami
Corned Beef
Sauerkraut
Swiss Cheese
Butter

Directions:
Place a nonstick skillet over a burner but do not turn on. Butter one side of two slices of bread. Place the slice, butter side down in the skillet and begin building your sandwich. Spread 1 Tbl Thousand Island dressing on the face-up side of the bread. Place the cheese on the sauerkraut, then a few pieces of corned beef then a few pieces of pastrami. Spread 1 Tbl of Thousand Island Dressing on the other unbuttered side of the second slice of bread. Place the bread, dressing side down, on the sandwich. Turn the heat to medium and grill the sandwich slowly, pressing down on it a few times. Cook until the bread is golden brown and carefully turn. Continue pressing on the sandwich, or weigh it down with a plate or another skillet.
