4 cups frozen or fresh peas
4 cups stock
1 medium yellow onion, medium diced
1 large shallot, quartered
5 cloves of garlic, whole and peeled
Roasted Garlic Avocado Oil
2 Tbl Geaux Green Daily Blend
Melange Pour Le Pain or Everything Blend for topping

Directions:
Preheat oven to 350 degrees. Place onions, shallots and garlic on a sheet pan and drizzle with Roasted Garlic Avocado Oil. Roast until golden brown, about 15 minutes. Set aside to cool.
Meanwhile, in boiling water, blanch peas for 3 minutes to soften skin. Shock in ice water to stop the cooking process. To a blender, add stock, peas, Geaux Green blend and roasted veggies. Blend until silky smooth and set in fridge to keep cool for serving.
To serve, spoon into a bowl and layer on your toppings. We used pumpkin seeds, bell pepper and corn. Try cucumbers, jalapeños or diced zucchini. Add in grains. We love rice, cous cous and farro. For a crunchy finishing touch, sprinkle on Melange Pour Le Pain or Everything Blend. Now, grab a spoon!
