"Chipotle" means "Smoked Chile" and these peppers are the familiar Jalapeno Chile that has been smoked and dried. The result is "morita"- a rich, deep brick reddish-brown color. The Chipotle registers 6.5 on the 10-point Scoville scale.
Use Chipotle in enchilada sauces, chili and stews. Its smoky moderate heat makes it a perfect barbecue rub. A great addition to corn bread batter too--cornbread with zip!
