Chinkiang vinegar, also called Chinese black vinegar or Chinese brown rice vinegar is widely used in Chinese cuisine. Chinkiang black vinegar has a distinct umami earthy flavor. It's lightly acidic and dark in color. Chinkiang is less sweet than balsamic but has more depth than white or red wine vinegar.

Made from fermented black glutinous rice, Chinkiang pairs well with soup dumplings. It's perfect for dressings, marinades and stir-fried dishes.
