Epazote is a lemony, slightly acidic and pungent herb. It is most commonly used in legume dishes to quell the gastrointestinal effects of beans, beans the magical fruit.

Epazote can be used in place of dried cilantro in recipes. However, for folks who do not care for cilantro, they will likely have the same opinion of epazote.
