Annatto Seed

Annatto, also known at Achiote and Roucou, lends a slightly nutty, sweet and peppery flavor to dishes. Annatto is the major component in Achiote paste--a Latin cooking staple. Annatto lends a distinctive yellow amber color to recipes. It's often referred to as "poor man's saffron" because its color is similar to the expensive threads.
