Made from dried mangos, Amchur is also known as Amchoor or Mango Powder. It's often found in Indian dishes like curries, stews and chutneys. It adds a fruity tanginess to dishes. It pairs well with chile powder, cloves and coriander.
South Louisiana cooks can put Amchur to good use on venison and teal (duck). Hunters have found that Amchur tenderizes tough cuts and helps with the gaminess that is often associated with wild game. One teaspoon of Amchur is equivalent to 3 Tablespoons Lemon Juice.
