Salad In A Jar with Peach Basil Vinaigrette

Sad desk lunch? Nope. Not possible with this beauty. Repurpose a jar and get ready to turn that frown upside-down. Aside from delicious, this one also falls into the clean-the-fridge-and-pantry category (that's a category, right?) Load up a jar with veggies, grains, nuts and cheese. Shake up a quick vinaigrette, and it's lunchtime!

Ingredients for the Basil Peach Vinaigrette:
1/4 cup Peach Balsamic Vinegar
1/2 Basil Extra Virgin Olive Oil
2 tsp shallot, minced
1 Tbl Dijon mustard
1 tsp honey
1 Tbl Parsley, chopped
1/4 tsp salt

Directions for the Basil Peach Vinaigrette:
Place all of the ingredients into your Salad Dressing Bottle. Shake until well combined. Set aside for when you build the Salad in a Jar.
Store leftover dressing in the fridge for the week.

To Layer the Salad in Your Jar:
For our salad, we used a large, 64-oz jar.
1-Pour in 2-4 Tbl Basil Peach Vinaigrette
2 Layer in your hearty, heavier ingredients like beans and grains-we used chickpeas and farro
3-Top with lighter veggies like corn, diced cucumber and halved cherry tomatoes. Nuts would be a great addition to this layer!
4-Top with greens and your favorite cheese.
