This EVOO is "cold pressed" like all of our olive oils are.
Cold pressed olive oils are raw olives and the fresh fruit or spices crushed at the same time so that their natural unfiltered juices can combine during the production process. The temprature must be at or below 65 degress, and they must be crushed within 24 hours of harvesting. Our olive oils are crushed within 8 hours of harvesting!!!
