This completely unique purple tea is a tea varietal grown in Kenya. The purple color is due to high levels of anthocyanins, the same antioxidants in blueberries, cranberries and eggplant. Anthocyanins track down free radicals and reduce inflammation in cells--a pretty strong, health-boosting antioxidant.
Although it's technically its own category, Purple Tea is reminiscent of Green Tea. We steep it like a green tea--water under the boil at 175°F and for 3 minutes. What's more fun is adding some lemon juice to the steeped tea--WOW! It turns a vibrant purple. So fun!
