Double zero flour, or Tipo 00 flour, is Italian-milled soft wheat flour. Often referred to as "pizza dough flour," this flour makes for a crispy bottom on pizza pies with those distinctive bubbles on top. 

Double zero (00) indicates how finely refined the flour is. There are four levels in the Italian scale: 2, 1, 0, and 00. 00 is the finest milled flour, and 2 is coarsest.
