Fruit with Vanilla-Honeybush Simple Syrup

Honeybush tea grows in a small area of South Africa. It's often referred to as the cousin of Rooibos. They are similar, but Honeybush is a bit sweeter. It's aroma and flavor is much like a dark honey, and it makes a excellent component in blended herbal teas. It's also a great choice for this simple syrup. Drizzle it over fresh fruit and pack it up for a picnic!

Ingredients:

12 oz water

2 heaping Tbl Honeybush

1 cup sugar

1/2 tsp Ground Vanilla Beans

 

Directions:

Place the Honeybush in a large glass measuring cup. Boil the water and pour it over the Honeybush. Allow to steep for 10 minutes. Strain. In a pot, heat the strained Honeybush tea and sugar. Bring to a simmer and stir until the sugar is completely dissolved. You can continue to simmer and stir to reduce a bit until you achieve the syrup consistency you desire. Stir in the Ground Vanilla Beans. Use to sweeten tea or over fresh fruit.
