Fresh, fast, delicious and oh so good for you, these veggie skewers make for an easy weeknight side (or main course.) Drizzle them with Harissa Extra Virgin Olive Oil and cool down the kick with a side of this probiotic-rich tzatziki.
Ingredients for the Skewers:
1.5 inch pieces of Bell Pepper, Mushrooms, Red Onion, Squash, Zucchini
Salt & Black Pepper
Directions for the Skewers:
Preheat grill to medium-high, 375-400°F. If using wooden skewers, be sure to soak them in water for at least 30 minutes. Skewer the vegetables and drizzle with Harissa Extra Virgin Olive Oil and season with salt & pepper. Grill the skewers, turning them to create distinct, dark brown grill marks. Lower the heat or move to a cooler section of the grill to continue cooking without charring the vegetables. They are done when the squash and zucchini can be easily pierced with a knife.
