Cool as a cucumber, tzatziki is a delicious topping for shawarma or just about anything. We love it with our Vegetable Skewers for a yummy dip with a probiotic boost.
1 large cucumber, seeded, unpeeled and grated
1 Tbl Salt
2 cups full fat plain yogurt or Greek Yogurt
1/2 cup sour cream
Juice of one lemon
1 Tbl Arbequina Extra Virgin Olive Oil
2 tsp minced garlic
2 tsp dried dill
Salt and Freshly ground black pepper, to taste
Toss grated cucumber with tablespoon of salt and place in a sieve over a bowl. Place in refrigerator overnight to draw out water. Place yogurt in a cheescloth or coffee filter lined sieve over a bowl. Place in refrigerator overnight to draw out whey. The next day, discard the liquids from the cucumber and yogurt or save the liquid to add to smoothies or soups. Combine all ingredients and adjust salt and pepper to taste. Allow flavors to meld for at least 30 minutes before serving.
