Corn and Zucchini come together in these delightful fritters that are perfect for a meatless meal and fantastic as a side. We love them alongside our Golden Tilefish with Capers and Butter. Yum! Farmstand Veggie Blend is a must for complimenting the sweet corn and zucchini. Yellow squash subs in for zucchini in a pinch. We often use a combo of zucchini and squash. Make these for dinner tonight!
2 medium zucchini, grated
3 ears corn, niblets cut from the cob
2 Tbl Farmstand Veggie Blend
1/2 tsp salt
½ cup all-purpose flour
¼ tsp baking soda
¾ cup buttermilk
Caramelized Onion Avocado Oil
Sprinkle the zucchini with salt and set in colander to drain or squeeze in a piece of cheesecloth.
In a bowl, combine the flour, baking soda and salt. Beat in the buttermilk and egg. Fold in the zucchini, corn and Farmstand Veggie Blend.
Drizzle Caramelized Onion Avocado Oil in a skillet and head over medium-high heat. Working in batches, use a ¼ cup measure to portion batter into the oil. Add oil as needed to shallow fry the fritters until golden brown on both sides and firm to the touch.
This batter can also be prepared in a waffle iron!
