Rotisserie chicken has long been a busy weeknight time saver. What we most love about them is their versatility. They can be added to a curry, enchiladas, soups and sandwiches. This Slow Cooker Whole Chicken offers that same versatility minus the last-minute stop at the grocery store. Pop a whole bird in your slow cooker in the morning, and you've got chicken ready for devouring. Plus, you get to customize the flavors. Pick a Spice Blend and get ready to get creative!
Ingredients:
1 3-4 lb chicken, giblets removed, rinse and patted dry
1 oz Spice Blend of your choice
1 tsp sea salt
Directions:
Combine the Spice Blend and salt. (Keep reading for our recommendations for Spice Blends.) Season the chicken on all sides with the spice blend. Be sure to lift the skin on the breasts and rub the blend under the skin. Also be sure to season the cavity. Place the chicken in a slow cooker and set on low for 8 hours. There will be lots of liquid in the pot at the end. You can use this to make a gravy. We freeze it to use in soups or stews at a later time.
