Sheet Pan Supper: Espresso Balsamic Flank Steak Roll-Up with Goat Cheese and Roasted Veggies

Ingredients:
2 lbs flank steak, flattened to 1/4 in thickness
Butcher Salt
1 lb whole carrots, quartered length wise
2 heads broccoli, cut into florets
4 tsp Capital Heights blend, divided
Caramelized Onion Avocado Oil
2 tsp Rosemary Sea Salt, divided
Espresso Balsamic Vinegar


Directions:
Preheat oven to 375 degrees. Line sheet pan with parchment paper.

Butterfly steak or with a meat mallet flatten to a quarter inch thickness. Lay flat. Spread Herbed Goat Cheese in a layer in the middle of steak giving an inch on each side to the edge. Roll the width of steak into itself and make sure edges are tucked. Roll taught and tie off or secure with skewers. Place in center of sheet pan.

Place quartered carrots and broccoli florets on each side of steak. Drizzle the Caramelized Onion Avocado Oil generously on the vegetables and flank steak. Season the flank roll up with Butcher Salt. Season the vegetables with Capital Heights blend and Rosemary Sea Salt.

Place in oven. Cook for 20 minutes. Remove from oven and drizzle Espresso Balsamic on the steak and carrots. Place back in oven for 5 minutes to caramelize. 

Let rest 5 minutes before slicing and serving.
