1 package Rosemary White Bean mix
Caramelized Onion Avocado Oil
1 lb smoked cured ham steak, cubed
Rosemary Extra Virgin Olive Oil
Salt and Pepper, to taste
Open Rosemary White Bean Mix and remove spice packet. Empty the white beans into the Instant Pot. Fill empty bean mix bag with water and pour over bean mixture. Do this twice. After, empty spice packet and stir into the pot.
Close Instant Pot lid. Set to 45 minutes on high pressure cook and natural release for 15 minutes. After the 15 minutes, press the quick release button and expel extra pressure. Open, stir and keep on warm for 10 minutes to let starch of beans naturally thicken the liquid. Salt and pepper the beans to taste.
Meanwhile, heat Caramelized Onion Avocado Oil over medium high heat until shimmering. Add in ham cubes to pan and cook until golden brown.
Serve beans over rice. Top with ham and a drizzle of Rosemary Extra Virgin Olive Oil.
