Coconut Berry Granola Bars

1 cup shaved coconut
1 cup almond slivers
2 cups oats
1 1/4 cups Janway's Honey
4 Tbl Berry Beneficial blend
4 Tbl chia seeds
4 Tbl toasted sesame
White chocolate (optional)
Raw shaved coconut (optional)

Preheat oven to 350 degrees. Layer the oats, almond slivers and shaved coconut on a sheet pan and cover with foil. Toast for 10-15 minutes or until golden brown. 

Meanwhile, heat the honey in the microwave until bubbling, about 1 minute. You just want to heat it enough so that the blend can easily meld in. Add the Berry Beneficial blend into the hot honey and mix well until combined.

In a large mixing bowl, mix together the toasted oats mixture, chia seeds and toasted sesame. Pour the honey on top and use a large spatula to mix together. Once well blended, pour into an 8x8 pan. It helps to have parchment lining your pan so that you can easily pull it out to cut later. Pack down the granola mixture and top with white chocolate and raw coconut. Press to combine toppings and granola.

Put in the fridge for 1-2 hours until firm. Cut into bars and serve. You can store the granola bars in the fridge for up to 2 weeks.
