We went straight to the source for this recipe. And we're certainly glad we did! Marty over at Andy Roo's is the brains behind the line of low-salt and no-salt blends for everything from Red Beans to Grilled Fish. And this Monday staple does not get much simpler that this. Everything in a pot. Bring to a boil. Simmer and enjoy.
1 lb dried Red Beans
1 lb smoked sausage
1 lb pickled pork
1/2 large onion, diced
2 ribs celery, diced
1/2 bell pepper, diced
2 Tbl Andy Roos Red Bean Seasoning
Place all ingredients in a large dutch oven or stock pot. Add water to about 1 inch above the ingredients. Bring to a full rolling boil. Reduce the heat and simmer 4 to 5 hours. Stirring and adding water as necessary. Serve over rice.
