Soprano's Greek Blend is a savory mixture of Mediterranean herbs that's full of flavor. Blended locally in Morganza, Louisiana, this Greek blend is rich with aromatic rosemary, oregano and spices. It's salt free so you control the sodium. We combine Soprano's Greek Blend with our Rosemary Olive Oil to rub on chicken skewers. Serve alongside cool cucumber-filled tzaziki for a delicious outdoor meal.
For the Chicken Skewers...
12-6" bamboo skewers, pre soaked in water
3 boneless, skinless chicken breasts
Salt to taste
Slice each chicken breast into four long strips. Lightly salt the chicken (if desired). Thread the chicken onto the skewers. Combine the Soprano's Greek Blend with the Rosemary Extra Virgin Olive Oil to make paste. Coat the chicken with the paste and allow to sit for at least one hour and up to 12 hours. Preheat the grill to 400 degrees. Grill the chicken on one side until golden brown grill marks are seen. Turn the chicken and lower the grill to 325 degrees--or move the chicken to a cooler side of the grill. Grill until cooked through and juices run clear--about 10 minutes. Serve with Tzaziki for dipping.
For the Tzaziki...
1 large cucumber, seeded, unpeeled and grated
1 Tbl Salt
2 cups plain yogurt
1/2 cup sour cream
Juice of one lemon
2 tsp minced garlic
2 tsp dried dill
Salt and Freshly ground black pepper, to taste
Toss grated cucumber with tablespoon of salt and place in a sieve over a bowl. Place in refrigerator overnight to draw out water. Place yogurt in a cheescloth or coffee filter lined sieve over a bowl. Place in refrigerator overnight to draw out whey. The next day, discard the liquids from the cucumber and yogurt. Combine all ingredients and adjust salt and pepper to taste. Allow flavors to meld for at least 30 minutes before serving.
