Foil packet cooking is a easy way to get a healthy meal to the table--they're fast and require very little cleanup. This version uses lots of fresh summer veggies plus our Tuscan Herb Avocado Oil. The prosciutto can be omitted for a vegetarian version. These can go in the oven or on the grill.
5-6 yellow squash, quartered lengthwise
5-6 zucchini squash, quartered lengthwise
1/2 pound fresh green beans (or a bunch of asparagus)
1 sweet yellow onion, thinly sliced
4-5 slices of prosciutto
1/2 parmesan cheese, shredded or grated
Tuscan Herb Avocado Oil
Aluminum foil cut into 12 " pieces or large enough to hold the veggie portions
Heat oven or grill to 400-425 degrees. Cut each slice of prosciutto into 2-3 pieces, lengthwise. On a piece of foil, place 1 quartered yellow squash, 1 quartered of zucchini squash and 2 green beans and sprinkle with parmesan cheese. Wrap in a piece of prosciutto. Add some onion slices and drizzle with Tuscan Herb Avocado Oil. Fold the foil so that it makes a packet, with the corners and edges sealed. Bake or grill for 10-15 minutes, depending upon how crisp you like your prosciutto. Unfold the packets and enjoy!
