Try this simple sauteed fish--you won't be sorry!

Ingredients:

2 fish filets--grouper, snapper or drum are good choices

1/2 oz Smoked Porcini, Shallot, and Mustard Blend

3 Tbl Garlic Olive Oil, separated

Salt to taste (optional)

Directions:

Rub the fish on both sides with the Smoked Porcini, Shallot, and Mustard Blend and salt (if desired). Allow the fish to sit with the seasoning for 15 minutes to allow the flavors to develop. In a nonstick pan, heat 2 Tbl Garlic Extra Virgin Olive Oil over medium-high heat. Saute the fish, skin side down, until the fish is golden brown and about 75% cooked through. Turn the filets and lower the heat. Cook the fish until it flakes easily and is cooked completely through--about 7 minutes. Drizzle with the remaining olive oil and serve.
