This recipe came to us from a customer who says that this is her go-to dessert for her ladies card group. She uses our Pomegranate Balsamic which is the perfect compliment to fruit and a rich, creamy component like ice cream--or as in this recipe, mascarpone cheese. She builds it on a narrow serving platter and just hands out spoons. Then they dig in. You can also make this in pretty glasses. Use shot glasses to give everyone just a taste or in white wine glasses for a larger portion. Either way it's a gorgeous presentation.
Ingredients
3 pints strawberries, hulled and sliced
4 Tbl granulated sugar, separated
Juice of half a lemon
1/2 C mascarpone cheese
1/2 C heavy whipping cream
1/2 tsp Vanilla Puree
Fresh mint leaves
Directions
Toss the strawberries with 2 Tbl of sugar and lemon juice. Allow to sit for 30 minutes to allow juices to form. in a stand mixer or using a hand mixer, beat together the mascarpone, heavy cream and 2 Tbl sugar until stiff peaks form. Mix in the Vanilla Puree.
Place a portion of strawberries in each serving dish, drizzle with Pomegranate Balsamic and spoon a dollop of the mascarpone/heavy cream mixture over the strawberries and garnish with mint.
Mix up this dish by substituting the Pomegranate Balsamic with one of our new favorites: Strawberry Balsamic or Vanilla Balsamic. You can't go wrong!
