Picnic Chicken Legs with Righteous Rib Rub

Drumsticks are an affordable grilling option. They're a crowd-pleaser--kids and adults alike! These legs benefit from drying time in the chilly air of the refrigerator. This "dry brining" along with the salt and spices in the Righteous Rib Rub help yield a super crispy skin. The sweet-savory flavor along with the satisfying crunch will have your guests coming back for seconds...maybe thirds!

Ingredients

6 Chicken legs

2 oz Righteous Rib Rub

Arbequina Extra Virgin Olive Oil

Directions

Rub the chicken legs with the Righteous Rib Rub. Place on a rimmed baking sheet with a rack. This will allow air to circulate 360 degrees so that the drumsticks fully dry. Place in the refrigerator on the lowest shelf away from any other food or containers. Allow to "dry brine," uncovered for 24 hours.

Heat grill to medium-high heat--375-400 degrees. Remove the drumsticks from the refrigerator allow to sit at room temperature to take off a bit of the chill. Rub with Arbequina Extra Virgin Olive Oil. Grill over medium-high heat until you achieve distinct grill marks. Lower heat or move to a cooler part of the grill and allow to cook until no pink is visible closest to the bone.
