Sweet Pecan Pork Tenderloin

Need dinner in under an hour? Here's your answer. Roasted pork tenderloin is ready in about 45 minutes, and the prep on this dish is 5-10 minutes. This is a great weeknight dinner to serve with a salad or simple side. Serve leftovers on rolls with spicy mustard. That is, if there are leftovers.

Ingredients:

1 package pork tenderloin (there will be two tenderloins in the package)

1 clove garlic, minced

2 Tbl Arbequina Extra Virgin Olive Oil

1 oz Sweet Pecan Rub

Directions:

Preheat the oven to 375 degrees. Pat the tenderloins dry. Pierce the tenderloin at intervals and stuff with bits of minced garlic. Rub the tenderloins with Arbequina Extra Virgin Olive Oil and rub with the Sweet Pecan Rub. Place in a roasting pan (on a rack if it's available) and bake until the tenderloin registers 145 degrees--about 45 minutes. Allow to rest about 10 minutes. Slice and serve.

*Note--pork's safe cooking temperature was lowered from 160 degrees to 145 degress in 2011.
