In Louisiana, we enjoy a fairly long strawberry season. The berries from Tangipahoa parish are a must during spring. As prolific as they are, strawberry can be a tricky flavor. Often strawberry fillings and sauces need a little something to help boost the flavor. Enter our Pure Strawberry Extract. Made from natural strawberry concentrate, this extract is just what you need to ramp up that fresh-picked strawberry flavor.
1-1/2 cups strawberries, trimmed and halved
Juice of 5-7 lemons to make 1-1/2 cups lemon juice
3 cups water
1-1/2 cups sugar
1 tsp Pure Strawberry Extract
Puree strawberries and 2 tablespoons juice in a blender. Press the puree through a sieve to catch the seeds. Add in the remaining lemon juice, water, sugar and extract. Stir to dissolve sugar. Add more sugar if too tart. Serve over ice.
