This recipe is a great example of the versatility of many of our rubs. Apple Chipotle is excellent on just about any type of meat, and here it gives veggie skewers that same smoky-sweet kick. What a multi-tasker.
2 inch pieces of assorted veggies: Yellow Squash, Zucchini, Red Onion, Cherry Tomatoes, Mushrooms and Bell Pepper are good choices
1 oz Apple Chipotle Rub
Heat a grill to medium-high. Skewer the veggies--if using wooden skewers, soak the skewers in water for at least 30 minutes before placing on the grill. Brush the vegetables with Arbequina Olive Oil and sprinkle with 2 teaspooons Apple Chipotle Rub per skewer. Grill for 3-5 minutes until tender crisp and lightly browned on each side.
