If you've been looking for a delicious meatless alternative to a burger patty, we have a recipe we think you'll love. This recipe combines hearty and healthy sweet potatoes, black beans, flax seeds, mushrooms and walnuts. We believe meatless doesn't have to mean flavorless, and full flavor is what you'll get with our Dark La Mesa Chili Powder and Cuban Spice Rub. Get a creative with spices. You'll be surprised how much flavor you can coax out of a veggie patty.
Ingredients for Vegan Burger:
3/4 cup cooked quinoa
1/2 large red onion, very finely diced or grated on largest side of grater
1 cup finely chopped mushrooms, any variety
2 tsp salt
1 15-ounce can black beans, rinsed, drained and partially mashed
1 cup diced sweet potato
1 Tbl Flax Seed, ground
3 Tbl water
1 Tbl Cuban Spice Rub
1/2 cup finely ground walnuts
1/4 cup chopped parsley
Instructions for Vegan Burger:
Place the sweet potatoes in a microwave-safe bowl. Add 1 Tablespoon water and cover with a plate or plastic wrap. Microwave for 2 minutes or until the sweet potatoes are cooked and soft. Set aside.
Heat a large skillet over medium-high heat and add the Roasted Garlic Avocado Oil. Add the onions and saute until softened and becoming translucent. Add the mushrooms and saute until the mushrooms are golden and any liquid has evaporated. Add the steamed sweet potatoes and stir to combine. Add the black beans.
Transfer the mixture to a mixing bowl and add the quinoa, Dark la Mesa Chili Powder and Cuban Spice Rub. Add the ground walnuts and stir. In a small bowl, combine the flax and water. Stir and allow to sit for just 15-20 seconds then quickly incorporate into the burger mixture. The flax is an egg alternative and serves as a binder. Gently fold in the parsley.
Place the bowl in the freezer for about 15 minutes. Remove from the freezer and form into eight patties. Taste the mixture and season with salt to taste. (At this point, you can freeze the patties.)
Heat the oven to 375 degrees. Place the patties on a parchment-lined baking sheet and bake for 10 minutes. Flip and continue baking for another 10 minutes. Cook longer for browned, crisp patties.
Serve on small buns with greens, a drizzle of Roasted Garlic Avocado Oil and for a real treat, hummus. Make it gluten-free by swapping out the bun for your favorite gluten-free alternative.
