
Who says you need to leave home to get a taste of the tropics? Get whisked away with this recipe for Island Coconut Drum with Peach Salsa featuring fresh in-season peaches and our thai-inspired Island Coconut Blend.
Ingredients for the Peach Salsa:
1 peach, pitted and diced
1/2 jalapeno, minced
1 Tbl finely chopped cilantro (or more to taste)
Juice of 1 lime
Salt & Pepper to taste
Ingredients for the Drum:
4-4oz Drum Filets
4 Tbl Island Coconut Blend
Salt
2 Tbl Lemon Extra Virgin Olive Oil
Directions for the Peach Salsa:
Combine all ingredients and allow to sit for about 10 minutes. Taste and adjust with salt and pepper.
Directions for the Drum:
Season the drum on both sides with salt and rub with the Island Coconut Blend. Heat Lemon Extra Virgin Olive Oil in a nonstick saute pan over medium-high heat. Saute the drum until the flesh begins to turn white and the fish starts to feel firm to the touch--about four minutes. Turn the fish and reduce the heat to low. Continue cooking the fish until completely done--about four minutes.
Serve the drum with the Peach Salsa. For the salsa, Mango or Papaya would be great in place of the peach. Or a combo of the three fruits would fantastic!
