If you need a recipe for a quick and delicious summer appetizer, look no further. These Tomato and Watermelon Skewers are the perfect simple summer app. With such a simple assembling process, you'll be shocked at how much flavor these no-cook skewers pack. Make these for your next backyard party or your Fourth of July celebration.
2 large tomatoes--beefy tomatoes work best
3 cups 1-inch watermelon cubes
8 oz mozzarella, cubed
2 Tbl Champagne Pear Vinegar
1 Tbl Key Lime Avocado Oil
2 Tbl chopped fresh mint
1 tsp Cyprus Flake Salt
1/2 tsp freshly ground black pepper
36 (3-inch) wooden skewers
Gently toss together all of the ingredients, except for the Cyprus Flake Salt and pepper. Allow to sit for one hour. Skewer one tomato piece, one mozzarella cube and one watermelon cube on each skewer. Arrange on a platter and drizzle with extra vinaigrette. Season with salt and pepper.
