As summertime does its summery thing, eggplant make their grand, and abundant, appearance. So many aubergines. A delicious way to use up these beautiful purple vegetables is to make a big batch Baba Ganouj.
In our version, we add in our Smoked Extra Virgin Olive Oil, Smoked Paprika and Pomegranate Balsamic for a smoky-sweet flavor detour. Take a dip with pita, crackers or try your hand at homemade Naan.
