Wide Eyed Ribeyes

We love Coffee BBQ Rub for beef--especially big, flavorful cuts like flank, hanging tenderloin and ribeyes. If you're lucky enough to find bone-in Cowboy Ribeyes, grab them--you won't be sorry. Locally, we buy this cut from Tramonte's Meat and Seafood Market. You'll need to order, but it's worth the wait.

Ingredients:

2-8oz Ribeyes

1 oz Coffee BBQ Rub

2 Tbl Arbequina Olive Oil

1 oz Roasted Garlic Sea Salt

Directions:

Rub the ribeyes wtih Arbequina Olive Oil and Coffee BBQ Rub.  Allow them to sit for 10-30 minutes. Preheat a grill to high heat or if you're indoors, heat a cast iron pan over high heat and preheat the oven to 400 degrees. Sear the steaks on the grill or in the cast iron until they are well browned--3-5 minutes. Turn the steaks and lower the heat on the grill or if in a cast iron, move the pan to the oven. Cook until desired doneness--approximately 7-10 minutes for a steak cooked medium. After cooking, allow the steaks to rest then sprinkle with a little Garlic Sea Salt.
