Watermelon Bellini

In need of a cocktail recipe for your summer sips repertoire or your Fourth of July celebration? This Watermelon Bellini recipe is one you'll definitely want to add to the list.

Frozen watermelon and chilled sparkling wine combine to make a refreshingly cool drink for those hot summer nights. And who doesn't love cooling down with a cocktail? This recipe makes eight six-ounce drinks, so invite a few friends over to help you whip up the cocktail!

Ingredients:

For the glass rim:

1/2 lime

2-3 Tbl Vanilla Sugar (available in-store)

For the Bellini:

3 cups frozen seedless watermelon

1 cup sparkling wine, chilled 

2 tablespoons granulated sugar

Juice of 1/2 lime

Pinch of salt

Additional sparkling wine and Watermelon and lime wedges for garnish

Directions:

Place the Vanilla Sugar in a shallow dish. Rub the lime on the rims of eight collins glasses or champagne flutes. Place the rim of each glass in the dish of Vanilla Sugar so that the sugar adheres to the rims of the glasses. Set aside.

In a blender, place the frozen watermelon, sparkling wine, granulated sugar, lime juice and salt. Process until smooth. Pour into prepared glasses. Top off with additional sparkling wine and garnish with watermelon and lime wedges.

There you have it! Makes eight 6 oz drinks.

Tip: Use any remaining pieces of frozen watermelon as ice cubes in your cocktail.
