Smoky Citrus Butter-Baked Redfish

Redfish, aka Red Drum or just Reds, is a great choice for baking because it's firm and easy to handle. Its mild flavor makes it a great contender for bold spices--like Smoked Sweet Paprika. It's a simple dish that delivers big flavor. Pop a sheet pan of this fish in the oven while you prep sides and a salad. Dinner will be served in under 30 minutes!

Ingredients:

2 lbs Redfish filets, rinsed and patted dry

1 tsp salt

Dash Cayenne

2 tsp Smoked Sweet Paprika

Juice of one small lemon

3 Tbl finely chopped onion

1/4 cup melted butter

Directions:

Preheat the oven to 375 degrees and position a rack in the center. Sprinkle both sides of the fish with the salt, cayenne and Smoked Sweet Paprika. Place the filets with the side that once contained the skin facing up. In a bowl, combine the lemon juice, onion and butter. Pour over fish filets. Bake until the fish is cooked through, opaque and flakes easily with a fork--about 15 minutes.
